The shredded beef used across Ugly Dumpling's menu is a slow-braised preparation — beef cooked until it pulls apart into long, tender strands with some retained braising flavor. In the wok it behaves differently from raw beef: it does not shrink or toughen, it simply heats through and absorbs the stir-fry sauce while maintaining its fibrous, melt-in-the-mouth texture.
Against egg noodles and house stir-fry sauce, this shredded beef creates a richer and more complex result than chicken. The braising depth in the meat adds a layer of flavor that raw proteins cannot produce — each strand carries residual spice and umami from the braise, which compounds with the soy-sesame stir-fry sauce.
